The most popular cookbook of the 18th century, “The Art of Cookery, Made Plain and Easy” cemented Glasse as the most influential cookery author of her age. It was the first cookbook to be written in simple enough terms that servants with a limited vocabulary could easily understand it. This ninth edition includes 150 new recipes not in the original 1747 edition and a “copious index”. In the early 19th century, the books was published in America with copies said to have been owned by Benjamin Franklin, Thomas Jefferson and George Washington. Glasse (1708-1770, brought up in Northumberland) was a dressmaker, and after being jailed for bankruptcy, was forced to sell the copyright for “The Art of Cookery”. Her work was rampantly plagiarised, especially in America. A cookery standard in a handsome binding.
